Garlic Bread Pizza Crust


I have a little confession to make... I have made this pizza about a dozen times since I first found it a little over 6 months ago. It has been our new go to recipe since the first bite. By swapping some of the olive oil for butter in the crust the texture even resembles a slight crunchy bread. HEAVEN! Add in garlic & Parmesan cheese you get one happy family.

Taco Potato Skins


Wanting something different than the basic potato skins for our New Year's Eve feast we had several recipes we wanted to experiment with this year. Ultimately we decided on Taco Potato Skins. They were super simple to make and easy to customize. I topped mine the way I like my tacos, simply with salsa and little sour cream! Next time we might try using chicken.

With a pound of ground beef and the smallest russet potatoes I could find, I got about 20 skins total. Easy Peasy... We will be also serving these up for the Super Bowl!

Bacon, Egg & Hash Brown Grilled Cheese


The first words that fell out of David's mouth after taking his first bite was.... Ooooo My. And then the first half of his sandwich was inhaled in less than 5 seconds following that. I sat there starring at him... Had I feed this man in the last few days? Yeap three meals a day...
Hmmm. Well then maybe it's the grilled cheese... I took my first bite. I about fell over. OOOOOMYYY! Sixty seconds later my sandwich was gone too. I'm always surprised at how good a grilled cheese really is. :)

What's not to love bacon, cheese, homemade hash browns, and an egg cooked my favorite way? This may not be diet food but it sure is my kind of comfort food.

Chicken Fajita Chowder


The weather here in Texas has been crazy to say the least. A few days ago we got 2 inches of snow. It was melted and gone with in 24 hours. :( Now this weekend we will be in the 60's. Geez, I wish the weather would make up its mind.

The first time we got snow this season was over Christmas, it managed to stick around for a couple of days. While the flakes fell I made a big pot of this chowder. It has been on my to do list since last year.

The chowder was so tasty! It was my first time to ever taste chowder. Wish I would have made it sooner. As a matter of fact I have it on our meal plan again for next week, we liked it that much! (Lets just hope its not in the 60's for long!)

We serve this up with Flour Tortillas or Sweet Buttermilk Cornbread Enjoy!

Sausage & Cheese Muffins

 
Omgosh! I adore these muffins for breakfast. They are easy to make especially if you use a food processor. It makes 18 muffins and are great hot or at room temperature.
I might just have to make another batch this weekend.. Yummm. :)

Bbq Shepherd's Pie


Over the holidays we made this for a get together we went to. David isn't a Shepherd's pie kind of guy so we added some bbq sauce, bacon, and cheddar cheese to the traditional dish for a fun twist.

This freezes well too. Just let it cool after preparing, cover and freeze. When ready to eat let it thaw, cover and bake 75 minutes. Then uncovered for 5 - 10 minutes longer until heated through.
