Bacon, Egg & Hash Brown Grilled Cheese


The first words that fell out of David's mouth after taking his first bite was.... Ooooo My. And then the first half of his sandwich was inhaled in less than 5 seconds following that. I sat there starring at him... Had I feed this man in the last few days? Yeap three meals a day...
Hmmm. Well then maybe it's the grilled cheese... I took my first bite. I about fell over. OOOOOMYYY! Sixty seconds later my sandwich was gone too. I'm always surprised at how good a grilled cheese really is. :)

What's not to love bacon, cheese, homemade hash browns, and an egg cooked my favorite way? This may not be diet food but it sure is my kind of comfort food.

Bacon, Egg & Hash Brown Grilled Cheese


Ingredients
  • 4 slices bacon, thick cut
  • 2 large eggs
  • 1 russet potato, grated (about 8-9 oz.)
  • 1-2 Tablespoons butter, softened
  • 4 slices bread (we used Texas Toast)
  • 6 oz. sharp cheddar cheese, grated (1 1/2 cups)
  • salt & pepper, to taste

Cooking Directions

  1. *In a large skillet fry bacon over medium high heat until crisp. Drain on a paper towel lined plate. Save about 1 Tablespoon of bacon drippings in skillet, pour remaining drippings in a bowl and set aside.
  2. Return skillet to stove and reduce heat to medium. Add eggs, season with salt & pepper, if desired. Cook eggs until done as desired. Remove eggs from skillet and place on a plate. Cover to keep warm.
  3. Return skillet to stove and turn heat up to high, add about 2 Tablespoons of bacon drippings. (If you don't have enough add some oil) Once heated, spread grated potato evenly over skillet bottom. Season with salt & pepper. Let cook for about 5 minutes untouched. Using a large spatula flip hash browns over and cook for an additional 3 to 5 minutes or until brown and crisp all over. Remove from skillet and set on plate and cover. Reduce heat to medium low heat.
  4. Butter all the slices of bread be sure to butter the edges too. Place 2 slices of bread butter side down in skillet. Add about a quarter of the cheese to both slices. Top with half of the hash browns, half of the eggs; two slices of bacon each and remaining cheese. Top with remaining bread, butter side out. Cook until bottom slice is browned, then carefully flip using a large spatula. Continue to cook until browned on bottom, about 5-7 minutes total. Cut in half and eat hot.
