I'm a big snacker. I'll grab turkey pepperonis, celery with ranch, or a handful of pretzel chip and some salsa. But my ultimate favorite is popcorn with wing sauce...... Yes, I know I have a small obsession with hot sauce and butter. But this is really good, one of my favorite things.
When pouring the sauce over it do it super slow and shake popcorn really good or you will get soggy popcorn. If it gets to wet for you, pop it in the oven @ 350 for about 5 minutes and then let rest for a few minutes and it will crisp up a bit.
Happy Birthday to me!! Yeap, that's right... I'm 28, again! :) Soooo to celebrate I wanted to share with you guys a few of my favorite things before I start with Christmas cookies, fudge and such. My hubby and me are CRAZY about white chocolate macadamia nut cookies. Your wondering why I didn't make cookies, right? Well cause I am not a super big sweets girl. Shocked? I am the total wings and beer kind of girl, I can't be bribed with chocolate. Nope, its true I promise.
We wanted something that could kinda count as a breakfasty/dessert thing. At least in David's eyes that is. :) These muffins have been made so many times in the last 4 or 5 years I can't even count. Super super easy and tasty. They make my hubby smile so bonus points for me!
The batter is a little thick so don't get scared just shake the pan a little to even them out and be sure to not over bake them. Makes 12 muffins which really helps us with portion control. You can also freeze these if need too. Enjoy!!

Ooooo. You just had to know I was going to give you more egg roll recipes, right?
These are so good! It's such a change from the regular leftover meal. We have eaten these for the last two years now. It's great to dip them in gravy or a cranberry dipping sauce. We look forward to these as much as the turkey sandwiches. :)

I hope everyone had a wonderful Thanksgiving! We had a great time spending it with family and friends. But I have sooooo much turkey and ham leftover. To help use up some of the leftovers I made this quick and super easy breakfast this morning using my cast iron skillet. Simple and great meal filling for going Christmas tree hunting! It isn't very pretty but it's tasty.:)
We had a cajun fried turkey so I used some more cajun seasonings and red pepper to season this but if I had a more traditional bird I would just use a bit of sage and rosemary to season it.
We liked it super meaty so I also used ham. This would be great just as a single meat dish if you don't have any or you can easily sub bacon or sausage here too. Even add a little onion and garlic with the potatoes too, if desired.
To brine or not to brine..... That is the question. Are you undecided? I was last year.
I had never never had a brined turkey before, but I was face with this way to big bird.. Like 24 lbs. for 5 people, crazy I know.
We would need to have multiple dinners of turkey and then probably still have to freeze some before we all got sick of turkey. I needed my turkey to be moist when it came out of the oven with enough moisture to be recooked without needing it to be drowned in gravy.
Brining was the answer!! A super juicy bird on turkey day and great moist leftovers even when they got recooked in the oven. Even though I had a huge bird I still only brined for about 8 hrs. dried it off with paper towel and let it rest uncover in the fridge for about 2 hours just to make sure the skin was dry (that's how you get crispy skin). The longer the meat soaks in a brine the softer it will be come, keep this in mind. To much brining isn't a good thing.
I used a metal pot used for frying to soak, be sure to use something that is food grade. Even a roasting bag or a large cooler can work. I was lucky enough to have plenty of space in my fridge to keep this in, if you can't afford the space keep it covered with bags of ice.
I know I have talked your eyes off by now, but one more quick thing! I even give you how I roasted and seasoned my bird if you want to do it like I did. I hope your turkey is as wonderful as ours was! :)

one year ago: Baked Bacon Cheddar Corn
A few days ago we tried this side dish out as a test run for Thanksgiving. It was wonderful, like having your sweet potatoes and a apple pie all in one. I know the combo sounds a little weird but our family loved it. The pecans add a nice touch! Might next time try it with maple syrup instead of agave nectar too.
one year ago: Garlic Potatoes
Bacon green bean goodness. Yes, its bacon again. Do you see the pattern? lol ;) Anywho, these green beans were an instant favorite from the first time we tried them. I can't count how many times we have eaten these over the last few months alone. It's a staple in our house. And these little babies will be on my table come Thanksgiving too.
And as for the mushrooms in it, sometimes we feel like them, and sometimes we don't. If the fresh green beans don't look so good at the store then I buy frozen just be sure to thaw them first.
This recipe is one of our fall favorites. As soon as it starts getting chilly we all crave it. And the best part of this recipe? It's got bacon in it! Of course. It's me remember, the bacon lover? :)
I love that it is a skillet meal, cast iron skillet that is.
P.s. The filing will make enough for 6 pork chops, when I took the pics we had only made 4 so I just put the extra filling on top when I took the foil off during the cooking.
Also, sometimes I throw a few dried cranberries in it too. Yum!!

It's November and time to start planning for the big Thanksgivings meal. Have you started planning yet?
Sometimes we have so much going on that we need a little help or short cut to get the dinner on the table. A few years ago when I was prego with our little monkey I was on bed rest but still had company coming to have dinner with us. I sure wish I had this recipe back then it looks fancy but will take less than 10 minutes to make. Plus it's perfect for portion control after stuffing yourself to the brim with turkey/ ham and all the trimmings.
Best of all, it doesn't need to be cooked! :)

It's no secret that our family is crazy about pizza. But who can eat pizza all the time? I like to really change how we eat pizza flavors. Like making Pizza Grilled Cheese, or Pizza Mac & Cheese or even Bubble Pizza . We love love to eat it in dip form like this Pizza Dip. Now if this is not enough pizza for you how about a very moist and flavorful pizza meatloaf?? It's loaded with cheese, sauce, and my personal favorite pepperonis! Now what's not to love? Swap your traditional meat loaf for this very fun twist.
Last week I found this recipe I had bookmarked quite awhile ago to try. We all haven't been feeling great the last week or so and we need a good soup to fill us up. I have to admit this is the first time the whole family had ever had any kind of broccoli soup, we all enjoyed it. As a matter of fact we polished off the whole pot in a matter of 12 hours, not bad for a family who doesn't like to eat when we are sick.
