Italian Beef Sandwich

Both of my parents were born and raised in the Chicago area. A few years back I remember my mama talking about her love of this wet sandwich she use to eat there. I was intrigued and decided I must make this sandwich! After a few awful awful recipes later I decided I would do this on my own from her description. Well what I have here is pure heaven to me... Wet and tender, flavorful. Just thinking about it makes me want another one! Try it you might just fall in love. :)

S'mores Cheesecake

With this lovely long weekend we had, we got a few things done that were needed to be done. So today was kind of a lazy day for us. While my 3 kids (Hubby included) played Skylanders this afternoon I was off in the kitchen making this little gem. All the greatness of S'mores with the richness and sophistication of a Cheesecake. A nice treat to end a great weekend with my family. :)

Some weekend mornings I am not up to cooking a big meal but the family expects a breakfast. Last year I turned to a new recipe I found online. It was an instant hit, now seems that at least once a month I am making these. They are great on the run too. :)

With this weekend being a long weekend with Memorial Day, we decided to grill and have a little family picnic. For the adults we decided we needed Spiked Lemonade. Which just happens to be one of my favorites. Sweet and with a little kick it hits the spot at our little picnic!

Homemade Cheez-Its

Last week I went grocery shopping a day earlier than I usually do because of things we had to do over the weekend, well because of this my list was not completely done. Well guess what I forgot? Yeap my Hubby's Cheez-its, well that made me feel awful so I decided to make them instead since it was on my cooking "to do" list. They turned out great! Actually I prefer this over the real ones, they were addictive. Cheesy and crunchy heaven! :)

Hey Y'all!
With summer just around the corner I start pulling out the easy no bake desserts. Here in Texas last year we had so many days that hit 100+ degrees that I wasn't about to use the oven just for sweets. So I started looking for a few easy ones that I didn't need the oven for and I found this one. It was an instant hit in our home just for the sheer fact it had cake batter in it. Yeap, we are hooked!

Beer Cheese Fries

Some days just call for a nice big plate of fries. Usually the call for us comes when Nascar or the Texas Rangers are on. Nothing can make them better than loading them up with chili, cheese, and bacon. Feel free to add to them like jalapenos, chives, ranch, sour cream, or my favorite peperoncini. Or anything your heart desires. What really makes these special is the cheese sauce so you need to at least make that, put in on hot dogs, hamburgers or even chips to make nachos. JUST MAKE IT! Yum! :)

Bacon Cheeseburger Cups

As you know by now I Love Bacon! Well and cheese, and beef, okay a lot of different stuff. Usually when you combine the three, wonderful and magical things happen. Throw in a biscuit cup and you have a quick dinner that the whole family will love.

Pizza Waffles

A simple quick lunch/snack perfect for kids. Mine just gobble this up, and it's a great way to use up leftover pasta sauce. Just be sure you use plain waffles, not buttermilk or fruit flavors.

Bacon Ranch Pasta Salad

Every summer one thing I look forward to besides swimming (I'm a fish out of water) is this pasta salad. A few years back I ran out of Suddenly Salad Bacon Ranch Pasta and decided that I would try to make my own instead. Well let me tell you that I L. O. V. E. this one much more! I have a hard time not eating a lot of it at one time, so I am very careful now to only make when I have a few extra people to help me. :)

Chicken Parmesan Burgers

Grilling weather is here in Texas, well actually it's been here for several months. Even though we just broke out the grill a few days ago. This summer we plan on using it more. We decided that we wanted to try something new for our first burger of the summer, so when I saw this recipe I was just dying to try it. It was great! Juicy and flavorful perfect for the opening season on our grill!

Honey Wheat Pizza Crust

One of our favorite pizza dough is one we use to eat at a pizza joint that closed a few years ago. We really missed it so after some trial and error we came up with a crust that is fluffy and lightly sweet. It's even better than the honey wheat crust we came to love way back when. :)

You can easily use all wheat flour if desired too.

Cilantro & Lime Cheese Dip

This is a dip we have been eating in our household for years, its one of my hubby's favorite dips. Its a staple on game day for us. We also trot this dip out when we have a big Mexican meal. It's a twist on the rotel cheese dip/ queso. I am just crazy about the lime and cilantro flavors!

Taco Seasoning

Why spend money on buying taco seasoning when most likely you already have all the spices you need at home? Plus I can control how much salt and what goes in it. Homemade just taste better too. Makes enough for one pound of ground beef. :)
