Chicken Noodle Soup

This is my hubby's favorite soup. I am not much of a chicken noodle kind of girl but this soup is very tasty. :) We haven't been up to snuff lately because of all the temperature changes we have had here in Texas. For dinner I usually whip out a big steaming bowl of this magic cure all. Now I really wish it was a cure all but it sure is warming, filling and down right tasty.

** 10/2012 - I updated this recipe to add extra celery, carrots, and some butter. Original had 1 11/2 cups each for veggies and 3 Tablespoons butter.

Barbecue Chicken Dip

For the BBQ chicken lover in your life. It's a nice change in pace from the regular buffalo chicken dip. We made this dip to satisfy my hubby's cravings and we were looking for a new twist.  Great for game day or a simple party. It's a new favorite in our house.
Don't like can chicken (me neither) use a rotisserie chicken!

Yeap, that's what the name says, Buffalo Chicken Cheese Ball.  A twist on a classic cheese ball and a man dream come true. All the spiciness of wings and deliciousness of a cheese dip. This was an instant favorite in our house. And it will be in our spread come the big game.
I LOVE this with chicken in a biscuit crackers, actually I refused to eat it with out them. (yeap, I am a pain. :))

Frito Chili Pie Egg Rolls

I am crazy about egg rolls, I love how versatile they are. You can stuff these with just about anything! This one is no exception. Frito Chili Pies are popular here in Texas, you can find them at carnivals, fairs, and even on the menu at school lunches. If by chance you have never heard or tasted one, it is a bowl of Frito's topped with chili and cheddar cheese even onions sometimes. Heaven in a bowl! :) Today we have a spin on it. Just as good too.  Feel free to add onions to it and dip it in more chili, cheese sauce, or even mustard.

If you need a tutorial on how to roll them go to my Breakfast Egg Rolls

Hash Brown Casserole

Let me start off first by telling you that the word "casserole" makes my stomach roll. The thought of all the food mixed together just does something to me. Only a few of them can I stand like this one. Actually I find this one to be rather addicting. The cheddar, sour cream, and butter just dance and lets not forget the potatoes. Yum! It's not pretty to look at but all I can say is its a favorite for me even stuffed into a buttermilk biscuit. :)

This is a copy cat recipe from Cracker Barrel's. I haven't been to one in ages so I can't tell you if its close or not.

Greek Egg Lemon Soup (Avgolemono)

Back when me and my hubby were dating, there was this little Greek restaurant right next to where I worked at the time. We had many dates there and he would pick this soup for me when I was sick in bed. Fast forward to today we now live over an hour from our favorite little Greek restaurant and haven't been there in ages, but I will never forget our special time we had there.
I have tried several different recipes for this over the years and this is as close as I have gotten. Now this soup isn't quite like the one way back then but its a close second to me and still brings me back down memory lane.
Isn't that the very definition of comfort food? :)

Sometimes your just not in the mood to cook. So what do you do? Well if your like us you reach for the phone and order take out. For us if it's not pizza, its Chinese food. I have quite a few favorites such as sesame chicken, orange chicken, and honey walnut shrimp.
Today I felt like Chinese but didn't want take out so after watching a triple D (Diners, Drive-ins and Dives) episode I saw a restaurant make it. Now you can make your own take out. :)

Buffalo Chicken Chili

We came across this recipe a few months ago and thought how great it would be for football watching or just a chilly night in. It has become a new welcomed change from just traditional wings (even though I could eat those everyday! :).  The great flavor of wings is super and now we can eat it in a chili too! I also serve this up with cornbread and Frito's :)
