After trying our a hand at making homemade tortillas a few years ago we became spoiled. Now anytime we have anything needing tortillas I whip up a batch. If you have left overs they freeze great, just separate each one with wax paper.

Flour Tortillas

- 4 cups all-purpose flour
- 2 teaspoons salt
- 2 teaspoons baking powder
- 4 Tablespoons lard
- 1 1/2 cups water

- * Mix flour, salt, baking powder together in a large mixing bowl. Mix in lard with finger tips, until the flour resembles corn meal. Add water and mix until dough comes together. Place on a lightly floured surface and knead a few minutes until smooth and elastic. Place in a warm spot and let raise 30 mins to an hour.
- Divide into 18 to 20 equal pieces ( about 2 oz. for taco size). Make 9 to 10 equal pieces for quesadillas ( 3.5 oz for quesadilla/burrito size). Roll out each piece into a ball. Preheat a large skillet over medium-high heat. Use a rolling pin to roll out ball into a thin round tortilla. Rotate 90 degrees and roll out again forming a circle.( If needed add just a little bit of flour on the counter, but I try to avoid it if possible because the tortilla sticks a little to the counter and helps them stretch out.)
- Place in hot skillet until lightly brown and then flip and repeat. Keep warm until served.
Makes: 18 to 20 Taco size
9 to 10 Quesadilla/ Burrito size

what brand of lard did you use?
@ Des, I use Armour, its the only kind I have ever used.
