Beer Battered Onion Rings

Can you believe that a few years ago David and I both hated onion rings? Yeap, it's true! I am not a big onion person in the first place but one taste of this yummy beer batter and I am a changed girl. And this batter is also great on chicken, pickles and I'm sure on a ton of other things too! :)

Beer Battered Onion Rings

  • buttermilk, enough to cover onions
  • 1 large onion, sliced
  • 12 oz. beer, room temp
  • 2 cups all-purpose flour, divided
  • 1 teaspoon garlic powder, divided
  • salt & pepper, to taste
  • season salt, to taste
  • peanut or vegetable oil, for frying

Cooking Directions

  1. *In a mixing bowl or pie dish soak onion in buttermilk for an hour to 1 1/2 hours in the refrigerator. Preheat oil in a large skillet or deep fryer over medium high heat. In 2 dishes divide flour and garlic powder. Season both with salt and pepper. In one of the flour dishes add the beer in slowly while stirring. (Your looking for a thinner batter not thick like a pancake.)
  2. Drain onions, and allow excess to drip off. Dredge onions in flour mixture first, then in the beer mixture. Cook until golden brown. Drain on wire rack over paper towels and sprinkle lightly with season salt and more garlic powder (if desired).

Feeds 4 to 5 as a side
