I grew up eating this simple yet filling dish from my mama. It's not the prettiest meal you ever seen but sure is tasty. If your in the mood you can even throw a few pieces of bacon in it too. This is a meal we love to call comfort food. :)

Sausage & Potatoes
Ingredients
- 14 oz. smoked sausage, sliced
- 2 lb. russet potatoes, cleaned & sliced
- 1/2 medium onion, sliced or diced
- 1 Tablespoon olive oil or bacon fat
- 1 1/2 teaspoons sage
- 1 clove garlic, minced
- dash cayenne or hot sauce (opt)
Cooking Directions
- *In a large skillet heat olive oil over medium high heat , add in sliced potatoes. (You can lay them out flat to get more crispy on each side, If you do this it will take about 10 mins to cook on each side. And I usually use 2 large skillets for this to make it go faster. Or you can just throw them in the pan stir them around it will give you more of a softer potato.) Brown potatoes, stirring occasionally.
- When potatoes are about 85% done or your last 5 minutes of cooking add sausage, onion, garlic, sage, and hot sauce.
- Reduce heat to medium, and cook until sausage is heated and the onions are soft. You want about a 60/40 ratio with potatoes and sausage

For 40 years, I've been making a very similar dish with red potatoes, olive oil, garlic powder, salt and pepper. About 10 minutes before the end of the cooking time, I add sliced Polska Kielbasa. Then, at the end, I top it with chunky-cut cabbage and cover it with shredded cheese (cheddar, colby, or whatever you have around). Once the cheese is melty, it's done. Cabbage with still be a bit crispy, just slightly steamed. YUMMMM! And I will be trying your recipe tomorrow!

My hubby made this for dinner tonight and it was ah-mazing. He used Chipotle Chorizo Chicken Sausage and fresh oregano instead of sage. He got the two mixed up from the herb garden; but it was a delicious accident. Thanks so much for the recipe. I'm quite sure we will have this again and often. :)
It looks good to me. I love simple, wrming meals like this. So easy for weeknight dinner.
My mamma made something similar growing up. She always sliced the smoked sausage, and cooked it in a pan with a little bit of water until it started to caramelize. Then she served it over homemade mashed potatoes.
I use the following variation:
Sausage, baby red potatoes, petite baby carrots, onion, head of cabbage quartered, butter, liquid smoke, garlic salt & pepper. Place in disposable foil pan. Cover with foil. Put in 375°oven or put on the grill. Stir occasionally until all is tender.
Just made this for dinner today! Quick, easy, & delicious! Used kielbasa because that's what I had on hand. Didn't have an onion so used a little onion powder (though next time I'll be sure to have an onion on hand!). Thanks!
We always add Green Beans to this dish. In fact we just had this meal the other day. Yummy !!

I grew up eating this with hot dogs instead of sausage! We still eat it to this day.

Reminds me of dinners my dad would make for my brother and I when we were little. :) (That sounds like he has passed, but he hasn't--I'm grown and out on my own, living 10 hours away, so I don't get to see him but once or twice a year.)
My family has made potatoes and onions like this since I was a little girl, adding sausage to make it a meal instead of a side dish once in a while. We don't use sage (we're northerns :-P) but boy does looking at this picture bring back memories :-)

Sounds yummy. I make something similiar. Only its sausage, fried potatoes, onions and green bell pepper. I'm going to try your version just to spice things up a bit.
I put my potatoes in the microwave to soften a bit before slicing they cooked up faster in the skillet. And all I had on hand was a smoked chedderwurst was good.
Made this last nite added green peppers sooo yummy
We have this dish at least once a week. I squirt Kens Steakhouse Zesty Itakian dressing over the top of the dish while it is cooking and then stir so it coats the rest of the dish. A huge hit with the family and at picnics!
Nostalgic recipe from my childhood as well. I used to do historical cooking demonstrations in a hearth (fireplace) and I cooked this one time in a cast iron skillet. Instead of using sage, I gathered some rosemary from the garden as well as red potatoes,green onions and garlic. Absolutely delicious and awesome flavor!
