Hush Puppies



What goes better with fish than hush puppies? These are great and true southern treat. This was an instant family favorite the first time we ever tired them.





Hush Puppies

2 cup yellow corn meal
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon black pepper
1 pinch cayenne pepper
1 1/2 teaspoons minced onion
2 eggs (slightly beaten)
1 cup buttermilk
2 cloves garlic (minced)
2 tablespoon bacon fat (melted)
Peanut oil or vegetable oil for frying (enough to completely cover hush puppies about 2-3 inches if pan frying)



*Preheat a deep fryer or large skillet with oil 350 degrees F. In a mixing bowl combine the first 9 ingredients. In another mixing bowl combine eggs, buttermilk, garlic, and bacon fat. Add wet into dry and mix until just combined. BE CAREFUL not to over mix. Drop 1/2 Tablespoon size of batter into hot oil. And fry until golden brown all over, about 3-4 minutes.

We like to serve these with Cajun Blackened Catfish
