Banana Nut Bread



Our little monkey is crazy about bananas. He just loves this bread, I even caught him trying to steal second piece. So we have renamed this bread in our house to Monkey's Bread. :) This bread is moist and full of great banana flavor.

Banana Nut Bread

Ingredients
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 1 cup sugar
  • 4 bananas, riped & black, mashed (about 2 cups)
  • 1/4 cup buttermilk
  • 2 eggs
  • 3/4 cup walnuts or pecans

Cooking Directions

  1. *Preheat oven to 350 degrees F. Grease and flour a loaf pan, set aside. In a large mixing bowl sift together flour, baking soda, baking powder, and salt, set aside. In another mixing bowl cream together butter, sugar, vanilla extract. Then stir in bananas, buttermilk, eggs, and nuts. When combined add into dry mixture and mix until just combined. Pour into loaf pan and bake for 50 - 60 mins OR until toothpick comes out clean in several spots.



Makes 1 loaf

Banana nut bread is my favorite desert in winter. It's great with a cup of tea. Thanks a lot for your recipe! I will definitely make it this weekend!

I tried it this morning and it turned out really well. It was very easy to make and came out moist, but firm.
