2 tablespoons vegetable oil
1/3 cup popcorn kernels
2 tablespoons butter
1 teaspoon hot sauce (we love Louisiana)
1 teaspoon Cajun seasoning
1/4 cup grated Parmesan cheese (feel free to add more if desired)
In a large skillet with a lid (we like our dutch oven for this), heat the oil over medium-high heat. Add 2 kernels of the corn and cover the skillet. When one of the kernels pops, add the remaining popcorn to the pan. Cover and shake until the popping stops, then transfer the popcorn to a large bowl.
Melt the butter in a small saucepan or in the microwave, then stir the Cajun seasoning into it.
Toss the popcorn with the seasoned butter, add parmesan cheese and toss again. Enjoy!
