Let me start off first by telling you that the word "casserole" makes my stomach roll. The thought of all the food mixed together just does something to me. Only a few of them can I stand like this one. Actually I find this one to be rather addicting. The cheddar, sour cream, and butter just dance and lets not forget the potatoes. Yum! It's not pretty to look at but all I can say is its a favorite for me even stuffed into a buttermilk biscuit. :)
This is a copy cat recipe from Cracker Barrel's. I haven't been to one in ages so I can't tell you if its close or not.
Hash Brown Casserole
26 oz hash browns, shredded and thawed
1/2 medium onion, chopped (I precook mine, I don't like raw onions)
1 can cream of chicken
1/2 cup butter, melted
8 oz. sour cream
2 cups cheddar cheese, shredded (I use Sharp)
salt & pepper, to taste
*Preheat oven to 400 degrees. Spray or butter a large baking dish. Mix all the ingredients together and put in baking dish. Bake for about 45 mins, rotating half way through. If you want an more crispy top I put mine in the broiler for an extra few minutes too.
