Flaming Shrimp and Grits

Back in October I got the chance to meet Alton Brown, a guy that I have admired for a very long time. I was as giddy as a school girl and acted just as dumb. I was in total control until he said hi. Then I lost it. I could barely speak and I am surprised I didn't crock something stupid out of my mouth like "will you marry me?" (Even though I could NEVER be without my hubby.) I always thought I would be cool with stars. I have met so many football stars and never acted like this before. I figured I could handle this but he just turned out to be exception (that's my story and I am sticking to it.)  :)

Eggnog Pancakes with Eggnog Glaze

Today is a great day! We are picking out of Christmas tree, watching my favorite movie A Christmas Story, and today is my birthday!
This morning I was served breakfast in bed by my wonderful and handsome hubby. He brought me a huge plate of these lovely pancakes. I whip up a batch of these every year, they are fluffy and has a lite eggnog taste. To tell you the truth, the glaze is my favorite part! :)

Baked Bacon & Cheddar Corn

Corn is definitely one my hubby's favorite foods. He loves it almost anyway. When you add cheese and bacon it's a winner in my book too. I am really surprised we don't eat this more often, it would be great for bbq's and picnics too. Usually we only eat this at Thanksgiving. If you like you could also add chopped onions or garlic to this too.

Root Beer Glazed Ham

Yes, I am different, I'll be the first to admit it. I stuff pizza into my grilled cheese, and I make candy corn flavored vodka . I get it. I am weird. Ever since I have been cooking I love to take my comfort food and twist it. Well this ham is just that, traditional brown sugary sweet with a spicy root beer glaze. :) This ham might just out shine my turkey this year on our Thanksgiving table.

Pineapple Upside Down Cake

This year for Thanksgiving we will be in Louisiana celebrating with my father in law.  His one request for dinner was a pineapple upside down cake. I had never tasted one let alone made one, up to a few months ago.  I had tried several recipes that I found on the net, but never anything that was truly spectacular.  So over trial and error I made my own.  Let me tell you I have never tasted a cake so fluffy. This may not be traditional but I'm thinking this cake will be come a permanent Thanksgiving tradition for us. :)

This can also be made with sugar substitute using Splenda brown sugar (you will use less, be sure to check back of package) and Splenda granulates. This is the way I will be making it on Thanksgiving as my FIL is diabetic.

Garlic Potatoes

I never got the chance to meet my grandmother on my father's side. She past away when my father was a teenager. The only thing I have to feel connected to her is these potatoes. It was something she always served during the holidays. I have no clue where this recipe came from but I really love it especially the crispy top. These potatoes are not diet food but calories don't count during Thanksgiving right?

Loaded Potato Soup

For the last 2 weeks our whole house has been under the weather. With us all not in the mood to really eat we haven't been cooking much. But when I put this on the table last night everyone ate seconds. This soup is awesome for "hidden" vegetables if you wanted it to! Carrots, celery, broccoli, the sky's your limit. Me personally I love it just the way it is with some rolls for dipping and I'm in heaven. :)

P.S. Can't you tell orange is my favorite. :)

Pizza Grilled Cheese

Who doesn't love pizza or grilled cheese? Both of them are two of my favorite things, probably because I am crazy about cheese and pepperoni. This one of my favorite quick lunches/snacks for my kids (okay for me too). It's easy and a fun new way to look at grilled cheese. Add whatever you like on your pizza. I even added mushrooms to mine (yes it's one of my favorite things too).  :) Even dip it in a little pizza sauce and its gooood.
