Who doesn't love pizza or grilled cheese? Both of them are two of my favorite things, probably because I am crazy about cheese and pepperoni. This one of my favorite quick lunches/snacks for my kids (okay for me too). It's easy and a fun new way to look at grilled cheese. Add whatever you like on your pizza. I even added mushrooms to mine (yes it's one of my favorite things too). :) Even dip it in a little pizza sauce and its gooood.

Pizza Grilled Cheese
Ingredients
- 4 sliced bread
- butter
- 4 mozzarella, sliced
- pepperoni (cut in half or mini)
- italian seasoning or basil
- parmesan cheese (opt)
- pizza sauce (for dipping)
- *Warm a medium/large skillet over medium heat. Butter each piece of bread on one side. When skillet is hot place a piece of bread butter side down on the skillet then add one slice of cheese and small shake of Italian seasoning or basil (add a small shake of parmesan cheese here too if desired). Top with a desired amount of pepperonis (I used about 8 -10 whole regular pepperonis per sandwich) If any other toppings are desired, add now. Add another slice of mozzarella and top with slice bread butter side up.
- Repeat with second sandwich. When bottom slice is golden brown then flip over carefully. Once both sides are brown remove from pan cut and serve with pizza sauce if desired.
Makes 2 Sandwiches

Just made these for me and my hubby. Changed it a bit, but still basic idea. I used fresh mozzarella and sliced it, used turkey pepperoni (70% less fat), and I actually have a seasoning called "Pizza Seasoning" so I used that.
It's very good and I'll definitely be making this again! Thanks for the wonderful idea. :)

Did you cook the pepperoni first?
Instead of pepperoni, can I use beef/chicken that cut it into smaller pieces?
@ Zee I don't cook the pepperonis first but if you wish to you can lay them out on a paper towel or paper plate and microwave just a few seconds and blot with more paper towels. As for using beef or chicken, you can use anything you like. The skys your limit, just besure its precooked. :)

Just made this for lunch. Added some garlic to the butter and was very good! Wonder if you could also use olive oil instead of butter?
@Angela I don't see why you couldn't use olive oil, just make sure its not extra virgin. :)
OMG! When I was a child, the PTA at my elementary school used to serve these to the students once a month and they called them "Pizzawiches!"

We've made these for years. I use garlic butter instead of plain butter. I then spread on barbeque sauce, add mozzarella cheese, pepperoni, hamburger, mushrooms, a little more cheese. We love them.

@ Samantha, during the summer we either have just chips or a salad with them.
I added homemade Italian seasoning and a little garlic salt to the buttered side of the bread before cooking it. Also, my husband likes heat added to his food, so I put some pepper flakes inside the sandwich and on the bread as well. The bread tasted like garlic bread. Amazing! My 14 year old picky eater daughter had 2 sandwiches so I know she liked it! Thanks for the recipe and idea :-)

Can I make extras and freeze what's left?
I have frozen bread before but not as a sandwich. You could try making them and freezing them before cooking them. When ready to eat defrost and grill. I would think cooking them and then freezing might make them soggy when you defrosted them. Good Luck and let me know if you figure it out! :)

I just made this for my family and it was really good! We used a loaf of Tomato Basil bread from Panera (since I work there), fresh mozzarella, pepperoni from the deli, mushrooms, italian seasoning and parm! It was soooo yummy! I paired it with a salad. We will definitely be having this again! Thank you so much! :)
I think I'm going to try this one night this week since we don't get home from our kid's football practice until almost 8pm. Do you think it would work with a panini grill?
