Loaded Potato Soup

For the last 2 weeks our whole house has been under the weather. With us all not in the mood to really eat we haven't been cooking much. But when I put this on the table last night everyone ate seconds. This soup is awesome for "hidden" vegetables if you wanted it to! Carrots, celery, broccoli, the sky's your limit. Me personally I love it just the way it is with some rolls for dipping and I'm in heaven. :)
P.S. Can't you tell orange is my favorite. :)

Loaded Potato Soup

  • 2 lbs. russet potatoes, peeled & diced (about 3 large potatoes)
  • 4 Tablespoons butter
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup milk
  • 12 oz beer (or milk)
  • 2 cups sharp cheddar cheese, grated
  • 12 - 14 strips bacon, cooked & crumbled
  • 8 oz. sour cream
  • 1 teaspoon hot sauce, as desired
  • chives, to garnish (as desired)
  • salt & pepper, to taste

Cooking Directions

  1. *In a large stock pot melt butter over medium heat, then add onions, cook for about 3-4 minutes until soft. Add garlic continue to cook an additional 2 mins. Season with salt and pepper to taste. Sprinkle in flour and constantly stirring about 2 minutes, gradually stir in chicken stock, milk, and beer (or more milk). Stir until flour is dissolved. Add potatoes and bring to a boil, when boil is reached reduce heat to a simmer and cook for 20 -30 minutes until potatoes are tender.
  2. Remove from heat use a stick blender (or potato masher) until desired constancy is reached. Return to heat on low, add sour cream and about 3/4 crumbled bacon, mix until combined. Add cheese a small handful at a time, stirring each time to allow to melt. Mix until smooth, taste add salt & pepper if needed and hot sauce if desired. Divide into bowls top with remaining bacon, more cheese and chives if desired.

Serves about 5

When you say feeds 5, are the servings around a cup each? I have a family of 7, and I am wondering how much to make.

Hi Rebecca! I base my size on my bowls. They hold about 1 1/4 cups to them. We are big eats here at our house and the soup is kinda of thick and filling. Hope that helps. :)
