Today is a great day! We are picking out of Christmas tree, watching my favorite movie A Christmas Story, and today is my birthday!
This morning I was served breakfast in bed by my wonderful and handsome hubby. He brought me a huge plate of these lovely pancakes. I whip up a batch of these every year, they are fluffy and has a lite eggnog taste. To tell you the truth, the glaze is my favorite part! :)
Eggnog Pancakes w/ Eggnog Glaze
Ingredients
- 1 cup all-purpose flour
- 2 Tablespoons white sugar
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 Tablespoons butter, melted
- 1 cup eggnog
- 2 dashes nutmeg
- cooking spray
- 3/4 cup powder sugar
- 1 Tablespoon & 2 teaspoons eggnog
- 1/4 teaspoon vanilla extract
- 1 Tablespoon butter, melted
- pinch salt
Cooking Directions
- *Preheat a skillet over medium heat. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk in egg, butter, eggnog, and nutmeg. Whisk batter until lumps are gone. Lightly coat pan with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
- *To make glaze - In a small bowl combine 3/4 cup powder sugar, 1 Tablespoon and 2 teaspoon eggnog, vanilla extract, 1 Tablespoon butter, and a pinch of salt. Whisk until lumps are gone. Drizzle over pancakes.
Makes 8 pancakes
