Eggnog Pancakes with Eggnog Glaze

Today is a great day! We are picking out of Christmas tree, watching my favorite movie A Christmas Story, and today is my birthday!
This morning I was served breakfast in bed by my wonderful and handsome hubby. He brought me a huge plate of these lovely pancakes. I whip up a batch of these every year, they are fluffy and has a lite eggnog taste. To tell you the truth, the glaze is my favorite part! :)

Eggnog Pancakes w/ Eggnog Glaze

  • 1 cup all-purpose flour
  • 2 Tablespoons white sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 Tablespoons butter, melted
  • 1 cup eggnog
  • 2 dashes nutmeg
  • cooking spray
  • 3/4 cup powder sugar
  • 1 Tablespoon & 2 teaspoons eggnog
  • 1/4 teaspoon vanilla extract
  • 1 Tablespoon butter, melted
  • pinch salt

Cooking Directions

  1. *Preheat a skillet over medium heat. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk in egg, butter, eggnog, and nutmeg. Whisk batter until lumps are gone. Lightly coat pan with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
  2. *To make glaze - In a small bowl combine 3/4 cup powder sugar, 1 Tablespoon and 2 teaspoon eggnog, vanilla extract, 1 Tablespoon butter, and a pinch of salt. Whisk until lumps are gone. Drizzle over pancakes.

These look so wonderful. I know my husband would love them. We have pumpkin fried rice on our menu this week. Come over and check it out. And be sure to come visit us on Friday and register for a really wonderful give away from the Shabby Apple.
