Basil & Garlic Tomato Soup

November is finally here. We are just now starting to see some cooler nights here in Texas. So that means soup!! :) This soup is creamy and delish. It will warm you right up. Serve it up with a grilled cheese or crusty bread for extra comfort!

Basil & Garlic Tomato Soup

Ingredients
  • 2 (28 oz) cans crushed tomatoes
  • 1 (14.5 oz) can chicken broth
  • 18 basil leaves, minced
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon sugar (as desired)
  • 1 cup whipping cream
  • 6 - 8 Tablespoons butter (as desired)
  • salt & pepper, to taste

Cooking Directions

  1. *In a large saucepan, bring the tomatoes and broth to a boil. Reduce heat; cover and simmer for 10 minutes.
  2. Add basil, garlic and sugar. Reduce heat to low; stir in cream and butter. Cook until butter is melted. Blend with stick blender until desired thickness. Taste and adjust seasonings as needed.
  3. Serves with grilled cheese or crusty bread.
