Corn is definitely one my hubby's favorite foods. He loves it almost anyway. When you add cheese and bacon it's a winner in my book too. I am really surprised we don't eat this more often, it would be great for bbq's and picnics too. Usually we only eat this at Thanksgiving. If you like you could also add chopped onions or garlic to this too.
Baked Bacon & Cheddar Corn
1 bag family size frozen corn, defrosted (mine is 9oz)
8 oz sharp cheddar cheese
8 slices of crumbled bacon, cooked (or 1/2 cup of real bacon bites)
1/4 cup of milk
salt & pepper to taste
In a baking dish combine corn, cheese, bacon, and milk. Place dish in cold oven and heat to 400 degrees F. When oven reaches temperature pull out and stir vigorously to make sauce (if the cheese isn't melted enough to make sauce then return to oven and recheck in 2-3 mins and stir again). Once sauce is made return to oven for an additional 5 mins or until heat thur out. Taste and add salt and pepper if needed.
