Apple Pie Bread

Ahhh.. The smell of autumn. I love this time of year. Here in Texas today we actually got some chilly weather and rain. Amazing I know! With the extra chill in the air it sent me into fall mode with my cozy flannel pajamas and this wonderful bread. This batter is sooo good to eat straight out of the bowl (I know I know its bad for me). I am not a big pie eater but this bread is yum! I love the chunk of apple bits and the buttermilk.

Without further adieu.. I give you Apple Pie Bread!

Apple Pie Bread

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup sugar
  • 1/3 cup buttermilk
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon apple pie spice
  • 2 cups apples, diced
  • 1 cup pecans or walnuts, chopped (I use pecans)
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon apple pie spice
  • 3 Tablespoons all purpose flour
  • 2 Tablespoons butter, softened
  • 1/4 cup pecans or walnuts, chopped (I use pecans)

Cooking Directions
  1. *Preheat oven to 350 degrees F. Grease the bottom and up the sides of an 9x5x3-inch loaf pan; set aside.
  2. In a large bowl, beat butter and sugars until combined. Add buttermilk and baking powder; beat until combined. Add eggs and vanilla; beat until combined. Add flour, salt, and apple pie spice; beat until combined.
  3. Stir in apples and nuts by hand. Spoon batter into prepared pan; spread evenly.
  4. *For the topping - In a small bowl, combine brown sugar, flour, and apple pie spice. Using a fork, cut in butter until mixture resembles coarse crumbs. Stir in walnuts or pecans.
  5. Sprinkle Streusel-Nut Topping over batter. Bake for 60 to 65 minutes or until a wooden toothpick inserted near the center comes out clean.
  6. Cool in pan on a wire rack for 10 minutes. Remove from pan.
  7. Cool completely on wire rack. Wrap and store overnight before slicing.

Makes 1 loaf (14 servings)

Kristin~ if I want to make them as mini loaves how would you change the temp and time? or even muffins? Just thinking...

To be honest I don't own mini loaf pans so that I wouldn't have a clue. But for the muffins if you use regular size pan I would check it at maybe 13 mins in?? I haven't tried them as muffins so I am just guessing here. If you figured out let me know! :)

I have a smaller loaf pan, would it be ok or should i split it between two pans?

Hi Amy, I would probably split between two pans. Most likely your cook time will be shorter too. :) Kristen
