Catfish Pecan w/ Meuniere Sauce

Hands down New Orleans is one of my favorite city's to eat it in. Every where you turn there is mom and pop restaurants and many one of a kind places.

A few years back, on one of our many trips to New Orleans, we ate at a little restaurant in Metairie. On a whim I decided to try a new dish that use pecans to bread catfish. With my first bite I had died and gone to heaven, It was so great! Almost as soon as we got back home I had to recreate it. I found this recipe and it's very similar to the wonderful catfish I had back then.

This is one of the dishes I serve when we want to celebrate at home. It's not an everyday dish (or dietfood) but it is definitely a favorite for me and the whole family. Enjoy!

Today I have a great slow cooker recipe that uses up leftover ham.

Last week I was looking for a different way to serve up ham and potatoes for Easter. I stumbled upon this and the rest is history. It's very hearty and simple, just throw in the slow cooker and forget it!

Salsa Chicken (Slow Cooker)

On the nights we have T-Ball practice for Monkey, I need something quick to feed the family. This fits the bill and it's a slow cooker meal! I like to throw it on in the a.m. and in 5 to 6 hours I have dinner. Not to mention that I can't make it enough for Monkey or Kitten, they love it.

Serve it up with some refried beans and/or Spanish rice and you are good to go. Makes super great leftovers for lunch the next day too, even as a baked potato filling.

Want it hotter? Add a few dice Jalapenos to the mix for a spicy touch.

Hot Chocolate Ice Cream

Tasty... This ice cream is scrumptious! It has made repeat performances in our house.

I had a few hot chocolate mix packets left over (you know the marshmallow lovers ones with a whole separate packet just for marshmallows! ;)) that need to be used up. We had a few semi warm days in a row here and it put me in the mood for one of our favorite kind of summer treats, ICE CREAM! The whole family smiles when I set a bowl of this delicious and creamy ice cream out for them..

A must try for any hot chocolate lover.

Sweet & Sour Meatballs

Grape jelly & meatballs.... I know what your thinking, but these meatballs are scrumptious!
Quick and simple old fashion recipe. Just throw it all in the slow cooker and soon you will have something super tasty. It left my whole family fighting over the last few meatballs.

Hi Guys! Hope everyone had a wonderful Mardi Gras and a sweet Valentine's Day. I have been on again and off again sick for the last 2 weeks and it's driving me bonkers! Actually right now I have no voice. NONE. :( Haven't since Sunday night.

And, I know I'm late to post this but I wanted to make sure it was posted. This dish is one of the ways we celebrate Fat Tuesday EVERY year! Enjoy....

When I started dating my husband back in 2000, we went to New Orleans to visit some of his family. We stay with his Mamaw, and she cooked us a feast! That was the first time I had ever tried gumbo, lucky for me she taught me how she makes it.

This was one of the first things I ever learned how to make, almost 13 years ago. It's full of meat and super hearty. David request this at least twice a month (It's one of his favs). This really isn't too spicy, I let people who want it spicier add in extra hot sauce at the end.

The browning sauce can be found in a little 4 oz. bottle down the condiments aisle (like ketchup, bbq sauce, etc.) OH! and feel free to use any combo of chicken here, she used a whole chicken cut up. I wanted my life to be a tad easier so I stick to boneless. ;)

Slow Cooker Mac & Cheese

In the summer we tend to use our crock pot a lot. When it's 100+ degrees here the last thing I want to do is heat up the kitchen. To get ready for the summer, we have been testing out a few new recipes. First up was this awesome macaroni and cheese.

Let me come clean with you..... I have made several recipes for mac & cheese in the crock pot. ALL OF THEM were complete disasters. Dry & always overcooked. But this time I checked on it every 30 minutes or so just to make sure I didn't screw it up, yet again. This time was perfect!! Creamy, cheesy, and down right yummy comfort food. It took about 2 1/2 hours and made the whole house smelled wonderful. ;)

Garlic Bread Pizza Crust

I have a little confession to make... I have made this pizza about a dozen times since I first found it a little over 6 months ago. It has been our new go to recipe since the first bite. By swapping some of the olive oil for butter in the crust the texture even resembles a slight crunchy bread. HEAVEN! Add in garlic & Parmesan cheese you get one happy family.

Taco Potato Skins

Wanting something different than the basic potato skins for our New Year's Eve feast we had several recipes we wanted to experiment with this year. Ultimately we decided on Taco Potato Skins. They were super simple to make and easy to customize. I topped mine the way I like my tacos, simply with salsa and little sour cream! Next time we might try using chicken.

With a pound of ground beef and the smallest russet potatoes I could find, I got about 20 skins total. Easy Peasy... We will be also serving these up for the Super Bowl!

Bacon, Egg & Hash Brown Grilled Cheese

The first words that fell out of David's mouth after taking his first bite was.... Ooooo My. And then the first half of his sandwich was inhaled in less than 5 seconds following that. I sat there starring at him... Had I feed this man in the last few days? Yeap three meals a day...
Hmmm. Well then maybe it's the grilled cheese... I took my first bite. I about fell over. OOOOOMYYY! Sixty seconds later my sandwich was gone too. I'm always surprised at how good a grilled cheese really is. :)

What's not to love bacon, cheese, homemade hash browns, and an egg cooked my favorite way? This may not be diet food but it sure is my kind of comfort food.

Chicken Fajita Chowder

The weather here in Texas has been crazy to say the least. A few days ago we got 2 inches of snow. It was melted and gone with in 24 hours. :( Now this weekend we will be in the 60's. Geez, I wish the weather would make up its mind.

The first time we got snow this season was over Christmas, it managed to stick around for a couple of days. While the flakes fell I made a big pot of this chowder. It has been on my to do list since last year.

The chowder was so tasty! It was my first time to ever taste chowder. Wish I would have made it sooner. As a matter of fact I have it on our meal plan again for next week, we liked it that much! (Lets just hope its not in the 60's for long!)

We serve this up with Flour Tortillas or Sweet Buttermilk Cornbread Enjoy!

Sausage & Cheese Muffins

Omgosh! I adore these muffins for breakfast. They are easy to make especially if you use a food processor. It makes 18 muffins and are great hot or at room temperature.

I might just have to make another batch this weekend.. Yummm. :)

Bbq Shepherd's Pie

Over the holidays we made this for a get together we went to. David isn't a Shepherd's pie kind of guy so we added some bbq sauce, bacon, and cheddar cheese to the traditional dish for a fun twist.

This freezes well too. Just let it cool after preparing, cover and freeze. When ready to eat let it thaw, cover and bake 75 minutes. Then uncovered for 5 - 10 minutes longer until heated through.
